So I’m here to drop a quick, easy, yummy and relatively affordable recipe that’s gonna free you from the shackles of buying a bucket of KFC for social gatherings.

What you’ll need :

Nacho chips (I used a whole bag of Tostitos and some Olay ranch chips )

Ground beef

Taco seasoning

Diced tomatoes

Diced sweet peppers

Diced purple onion

Diced scotch bonnet peppers

Shredded Lettuce

Grated Tastee Cheddar cheese

Mozzarella cheese

Sweet corn

Ranch

To start season your ground beef to your taste. I used Judine Organics Oregano Ginger Spice and Garlic Jerk Meat Spice and set it aside. Then I started working shredding the lettuce and on dicing up the green Sweet peppers, purple onion, yellow scotch bonnet pepper and red tomatoes (I know what you’re thinking “duh the tomato have to be red) but I wanted to highlight the use of colors to make the final dish pop!

Once I’m done with the veggies I start cooking the ground beef. Which is just letting it brown in a pan and once all the pink has disappeared add your taco seasoning and let that cook through for a while. This doesn’t take long maybe 15 mins so don’t worry you won't die of hunger.

Now that everything is cooked and prepped, time for the fun part!

In a baking dish you’re gonna add a layer of nacho chips , ground beef, shredded lettuce, chopped veggies including the corn then your two cheeses. Repeat the layers then top off with a nice layer of cheeses.

Pop in the microwave or oven until the cheese melt slightly and we’re done. Serve with ranch for dipping and thank me later!
